Not-quite-Nicoise Tuna Sandwiches (makes 2)
- 1 large ciabatta loaf
- 2 cans tuna packed in olive oil
- 2 T mayonnaise
- 2 T fresh lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 red onion, sliced
- 1/2 avocado, sliced
- A few leaves of romaine lettuce
On the bottom half, top with lettuce, onion, and avocado.
Mix tuna, mayonnaise, lemon juice, salt & pepper in a medium bowl. Spread over lettuce, onion, and avocado and top with top of bread.
